Everything Sweet and Chocolate Cookiemuffs

I have always been a fan of the Meringue Girls (I loved their first cookbook) – so I was excited to see that they’d branched out from meringues into other sweet treats – so that I can make their delicious treats without ending up with all of the leftover egg yolks in the fridge.  The new Meringue Girls cookbook, Everything Sweet, starts with my favourite section, edible gifts.  I am obsessed with giving people homemade food-related gifts (if you have a birthday party around me, you are likely to get chocolate chip cookies) and recipes for marshmallow rope, jam and colourful millionaire’s shortbread (a favourite of Beardy Husband’s) are a welcome addition to send for birthdays and holidays.

They’ve also used their eye for bright colours and decorating to adorn cakes and pastries – the glittery sesame seed eclairs and frothy eton mess layer cakes are works of art.  Like their previous cookbook, this might be a bit more difficult for a novice baker, but for someone who’d like a bit of a decorating challenge, this is perfect.

110g unsalted butter (softened)

110g caster sugar

110g light brown sugar

1 egg

1/2 teaspoon vanilla bean paste

220g plain flour

1/2 teaspoon bicarbonate of soda

300g chocolate chunks

IngredientsCream together the butter and sugars.

Cream together the butter and sugarsMix in egg and vanilla bean paste.

Mix in egg and vanilla bean pasteSift in dry ingredients.

Sift in dry ingredientsMix in chocolate chunks.

Mix in chocolate chunks Scoop into lined muffin tins (can fill them fairly high since they don’t seem to really rise)

Scoop into lined muffin tinsBake at 170C for about 15 minutes.  Allow to cool (but not too much – these are lovely warm!)
