Dulche de Leche Brownies

I am definitely guilty of using my baking as bribes!  These were devised for an employee of Beardy Fiance’s, someone who we are hoping to convince to watch our cat, wee McNulty, while we’re away at the wedding next month.

McNulty can be a bit of a troublemaker.  Just yesterday, our neighbours told us that when we’ve been letting McNulty out to play outside, he’s been creeping in through their cat flap to hang out in their kitchen.  So far, it seems our lectures on not wandering into strangers’ homes are being ignored.  It’s a process and I feel a bit like he’s in the boundary-pushing teenage years.

So in order to convince Minion Brian to look after McNulty, I decided to bribe him with some dulce de leche inspired brownies.  Because who doesn’t love this caramel-like milk sauce?  No one.  And it’s definitely worth dealing with a moody teenager (cat or otherwise) for.

Dulche de Leche Brownies (adapted from Allrecipes)

400g granulated sugar

225g dulce de leche

60g cocoa powder

4 eggs

1 teaspoon caramel flavouring

190g plain flour

1/2 teaspoon baking powder

1 package Chips Ahoy Dulce de Leche cookies

IngredientsCream together the dulce de leche and sugar.

Cream together the dulce de leche and sugarSift in cocoa powder.

Sift in cocoa powderMix in eggs and caramel flavouring.  Sift in flour and baking powder.

Sift in flour and baking powderMake sure you’ve fully mixed the ingredients together and place half of the batter in a lined brownie tin.  Add a layer of dulce de leche cookies.

Add a layer of dulce de leche cookiesCover the cookies with the rest of the brownie batter.

Cover the cookies with the rest of the brownie batterBake at 170C for about thirty minutes until the centre comes out clean.
