Popcorn Brownies

You ever have one of those weeks when you realise you’re absolutely exhausted?  That’s been me this weekend – everything just has all come at once!  School stress, long working hours, wedding planning (the invitations are finally out), exercise (I’ve gotten back into attending classes in the gym as well as doing a charity 5k) and trying to get ahead on dinner.  I’ve just reached the point where I’m totally exhausted!

So when I decided to bake, I wanted something quick and easy that I could throw into the oven while working on dinner.  Brownies are always an obvious choice – quick to throw together and easy to bake.  But since I had found some Chips Ahoy popcorn cookies, I threw together a popcorn brownie, just to see if the salty and sweet combination would work.  I was happy that it actually went together fairly well!

Popcorn Brownies (adapted from Velvet Moon Baker)

Ingredients:

175g milk chocolate

175g unsalted butter

250g caster sugar

3 eggs

75g plain flour

40g cocoa powder

50g buttered popcorn

6 Nabisco Chips Ahoy Popcorn Cookies

IngredientsMelt together unsalted butter and chocolate – allow to cool a bit.

Melt together unsalted butter and chocolateMix in with eggs and caster sugar.

Mix in with eggs and caster sugar.Sift in dry ingredients.  Mix in popcorn.

Mix in popcorn.Pour half of mixture into lined brownie tin – place cookies in mixture.

Place cookies in mixturePour the second half of the batter on top of the cookies.

Pour the second half of the batter on top of the cookiesBake at 180C for about 45 minutes – make sure it’s baked all the way through.  Allow to cool.
