So Peanut Buttery Cookies

I think I have previously told you about my friend Niall.  Niall loves peanut butter.  When I was at university and everyone was mocking American candy, Niall would defend Reeses and their brilliant combination of peanut butter and chocolate – one thing Americans do well is peanut butter!

I love to bake for my friends on Valentine’s Day and so, for Niall, this had to be the most peanut buttery cookie ever.  I went to the grocery store and pretty much hunted down anything with peanut butter which could be thrown into a cookie – I think maybe this is peanut butter enough for Niall?  But I’ll let you know what he thinks!

So Peanut Buttery Cookies (adapted from Nestle Tollhouse)

Ingredients:

3/4 cup granulated sugar

3/4 cup brown sugar

1/4 cup butter

1/4 cup peanut butter (I used this Reeses spread, but regular peanut butter would be fine)

2 eggs

1 teaspoon vanilla extract

1/2 teaspoon bicarbonate of soda

2 cups plain flour

1 cup peanut butter chips

1 cup Reeses unwrapped miniatures

1 bag Chips Ahoy Reeses cookies

IngredientsCream together the sugars, butter and peanut butter.

Cream together the sugars, butter and peanut butterMix in eggs and vanilla extract.

Mix in eggs and vanilla extractSift in dry ingredients.

Sift in dry ingredientsMix in peanut butter chips and Reeses miniatures.

Mix in peanut butter chips and Reeses miniaturesWrap the dough around the Reeses Chips Ahoy cookie and place on baking sheet.

Place on baking sheetBake for about ten minutes at 170C.  Allow to set and cool before removing from baking tray.

So Peanut Buttery CookiesAnd they are really peanut buttery – perfect for the peanut butter fan in your family!
