Dark Chocolate Creme de Menthe Cookies

I am probably one of the least trendy people ever – by the time I find out about something, it’s probably ending!  The adorable charm bracelet I got for my birthday?  Pretty much everyone at work already has it.  The cool bag that everyone on the tube is sporting?  Hmm, maybe I should get one?

So I can never remember if mint is a St. Patrick’s Day thing – I seem to remember peppermint being a Christmas thing, but can it be used for Paddy’s Day?  After all, mint is green (although I don’t think mint grows wild in Ireland – such a bad Irish fiancee!)

But cool or not, these cookies are amazing.  And you won’t be thinking about trendy while you’re secretly eating all of these….cookies transcend cool!

Dark Chocolate Creme de Menthe Cookies (adapted from Sally’s Baking Addiction)

Ingredients:

115g unsalted butter

100g granulated sugar

100g dark brown sugar

1 large egg

2 tablespoons milk

1 teaspoon mint extract (not pictured, as it was an improvisation)

125g plain flour

55g cocoa powder

1 teaspoon bicarbonate of soda

Creme de menthe candy melts

IngredientsCream together butter and sugars.

Cream together butter and sugarsMix in the eggs and peppermint extract.

Mix in the eggs and peppermint extractSift in dry ingredients.

Sift in dry ingredientsShape the dough into the ball by moulding a handful of dough around a candy melt.

Mould a handful of dough around a candy meltBake the cookies for about 20 minutes at 170C.  Allow to cool before moving them.

  1. Speaking of uncool, a have a v dusty bottle of creme de menthe lurking in my pantry – wonder if I could use that instead of the candies [which we don;t have in Australia]?
