Creme de Menthe Cookie Truffles

I pretty much consider Christmas to be baking season – while yeah, who doesn’t enjoy Christmas classic movie (Die Hard, Home Alone, How the Grinch Stole Christmas) and receiving Christmas cards and seeing family and snuggling up on the couch with hot cocoa while watching snow fall – but definitely the best part is baking.  I like to make sure that most of our friends and family receives not only a holiday card, but also a tin of Christmas cookies.  Over time, this has come to include more varieties of cookie (this year, I’m adding a gingerbread macaron, as well as some gluten-free gingerbread and vegan sugar cookies, in order to accommodate a variety of diets.  But when browsing in Delaware (when home for Thanksgiving), I saw these creme de menthe candy melts from Make ‘n Mold.  When I saw them, I immediately thought of pairing them with the seasonal Hershey’s Mint Truffle Kisses – mint overload?  No such thing.  Especially around Christmas.  These are a fairly easy two-step cookie and with the lovely green coating, add a cute look to your Christmas cookie – they were a big hit at Beardy Fiance’s work.

Creme de Menthe Cookie Truffles (adapted from The Cookie Dough Lover’s Cookbook)

Ingredients:

115g unsalted butter

50g granulated sugar

100g light brown sugar

2 tablespoons whole milk

1/2 teaspoon vanilla extract

125g plain flour

30g cocoa powder

1 bag Hershey Kiss Mint Truffles

1 bag Creme de Menthe Candy Melts

OLYMPUS DIGITAL CAMERACream together butter and sugar.  Mix in milk and vanilla extract.

OLYMPUS DIGITAL CAMERAWrap dough around a Mint Truffle Kiss, crafting it into a ball.  Place on a baking sheet and chill for several hours.
