I don’t need the cynical voice in my head when I’m browsing baking ingredients. I have Beardy Mum. It will inevitably occur when I’m home, browsing Target or Walmart, possibly with a moaning Beardy Fiance in tow. He will have wandered off to the tool section, while I try to focus in on the seasonal baked goods. Ah, Target, with the beautiful cookie cutters and seasonal candy.
But when I set eyes on some of these new and exciting flavours, my mum inevitably looks on reminding me of my shelves of Oreos and baking mixes. “Would you really use maple bacon cookie mix?” she asks me. But I grabbed this caramel apple cookie mix and assured her that I would indeed find a recipe making clever use of it. Then, when I “found” these limited edition Caramel Apple Oreos (ie: forced my aunt to track them down for me in New Jersey), I had everything I needed for a cheesecake. Perfect if you want something a bit different for Thanksgiving!
Caramel Apple Cheesecake (adapted from RealHouseMoms)
6 tablespoons unsalted butter
16 ounces cream cheese
100g granulated sugar
350ml caramel apple cookie mix
1 tablespoon vanilla extract
Crush the Oreos (I used my food processor – if you have one, it’d be great.) Melt the unsalted butter and mix with the Oreos. Spread the Oreo and butter mixture over the bottom of a springform pan (I put a piece of greaseproof paper over the bottom).
