Time for my summer cleaning. Now, summer cleaning in my flat isn’t quite like most people’s. I love looking at photos of bloggers’ kitchens and pantries, which all seem to be beautifully organised and to be custom-prepared for baking projects. That’s definitely not true of my kitchen at all. London is one of the most expensive places in the world to live, and so I constantly get asked how I can afford to live in London. The truth is that you do it because you have to, but it is difficult. As a result, our apartment is quite small and storage space is at a premium. Beardy Fiance is a natural handyman who has put up plenty of creative storage space, but it’s still at the point where I would feel a bit embarrassed to show photos of the kitchen here on the blog – there is just too much crammed in!
So for me, a clean out becomes snooping through my overcrowded shelves of chocolate and boxes of American sweets and pudding to see what I can use up. For awhile now, I’ve had half a box of Jell-o banana creme pudding in my cupboard, and I finally decided to stick to something simple: basic, easy and using up something in my cupboard. Perfect.
Chocolate Banana Cookies (adapted from Nestle Tollhouse)
3/4 cup caster sugar
3/4 cup dark brown sugar
1/2 cup unsalted butter
3 tablespoons Jell-o banana cream pudding
2 1/4 cup plain flour
1 teaspoon bicarbonate of soda
1 1/2 cup chocolate chips
1 cup chopped bananas
Mix in chopped bananas and chocolate chips.
