Strawberry Lemonade Cupcakes and Trophy Cupcakes & Parties

Jennifer Shea’s Trophy Cupcakes & Parties is an unusual cookbook in that it is more of a comprehensive party planning book.  This isn’t really a surprise, since Jennifer Shea has admitted that she started with a love of party planning as well as a desire to make the perfect cupcake.  This means that along with the chapter of cupcake recipes – everything from the basic vanilla to pink champagne buttercream and s’more cupcakes (so apparently I’m not the only person who’s obsessed with s’mores – these were apparently created specifically for Martha Stewart).  But the rest of the book is devoted to how to come up with an entire party from scratch – there’s some great ideas in the children’s sections (some of which could totally be stolen for adults): Pop Rocks cupcakes for a superhero party, sno-cone cupcakes for a pool party, invitations made with leis for a Hawaiian themed party.  I think this would be an especially great book for people with children, as there’s some great ideas for parties which could be used for various age groups (superhero in childhood, Paris themed for teenagers) or really anyone who’d love to add a bit of theme and planning to their parties!

9781570618642 Strawberry Lemonade Cupcakes (adapted from Trophy Cupcakes & Parties)

Ingredients:

1 tablespoon + 1 teaspoon lemon zest

1/4 cup lemon juice

1 cup buttermilk

1 cup unsalted butter

2 1/4 cups sugar

3 eggs

1/2 cup sour cream

2 1/4 cups cake flour

1 1/4 cups plain flour

1 tablespoon + 1 teaspoon baking powder

1/2 teaspoon baking soda

DSC_2310Zest the lemon and set aside.  Juice the lemon and add lemon juice to buttermilk – set aside.

DSC_2311Cream together butter and sugar.

DSC_2312Mix in eggs and sour cream.

DSC_2313Mix in buttermilk and sift in dry ingredients.

DSC_2314Scoop cupcake dough into cupcake liners.

DSC_2315Bake at 350F for abour 20 minutes, then allow to cool.

DSC_2316Frosting ingredients:

3 cups unsalted butter

6 cups icing sugar

1 1/2 cups strawberry jam

2 teaspoons vanilla extract

1/4 teaspoon salt

DSC_2322Cream unsalted butter and mix in sugar.  Slowly mix in vanilla extract, salt and strawberry jam.
