A friend of mine recently described crisp sandwiches as “Irish marmite” – that people either love them or hate them with the fire of 1,000 suns. It’s similar to root beer. We go out to dinner quite a lot at my favourite American restaurant and one of the drinks served is root beer. Myself and my friend Will are big fans (for me, it reminds me of my childhood in the US – for Will, I guess it’s just the taste) but Beardy Fiance finds it absolutely disgusting. But as with a lot of American goodies, I love to incorporate them into baked goods. The final straw was when I found this cute cookie dough from Betty Crocker and A&W Root Beer. It had to be cookie dough stuffed root beer brownies.
Had to be. Super root beer, and that great texture when you put cookies into brownies.
Stuffed Root Beer Brownies (adapted from Serious Eats)
12.25 ounces caster sugar
2.75 ounces cocoa powder
6.25 ounces plain flour
1/2 teaspoon baking powder
1 can root beer
Packet of root beer cookie dough (and ingredients on cookie mix)
