Chocolate Marshmallow Peeps Cupcakes

Is it wrong to admit the only thing that got me up this morning was thinking about the 4 day weekend which starts on Friday?  It’s actually going to be four days of just me and that cat since Beardy Fiance is home in Ireland for a few days.  I’ll probably meet up with my friend Eleanor from Intermittent Travel, but other than that, it’s going to be a lot of studying/getting the house sorted stuff.  So it kind of goes without saying that I won’t be making lots of Easter-related treats just for me to eat – it will most likely be a slow hoovering up on my Easter egg.  So this week, I made some over the top American candy-decorated chocolate marshmallow cupcakes as my big Easter bake.  This is really just a chocolate marshmallowy concept, but it’s really easy to do and could definitely be sone with some store-bought touches.

Chocolate Marshmallow Peeps Cupcakes (adapted from Joy of Baking)


A plate of chocolate cupcakes (these can be any kind, really, even store bought mix.  My go-to quick, easy recipe is from Marian Keyes’ Saved by Cake)

226g unsalted butter

1 teaspoon vanilla extract

198g marshmallow creme

230g icing sugar

3 tablespoons milk

1 packet chocolate mousse Peeps


Cream the butter and slowly mix in the vanilla, the marshmallow creme, the icing sugar and the milk.

DSC_2203Pipe the frosting onto the chocolate cupcakes.


Stick a Peep on top – and just a warning, this is an uber-sweet dessert!  But I loved it and so did Beardy Fiance’s workmates.
