One Pot Wonders and Spaghetti Alle Vongole Bianco

The weather is looking like it’s finally starting to turn this week, but I admit, we have been relying on our slow cooker for soups, rice dishes and stews quite a bit this winter.  There’s nothing nicer than coming home to a lovely, cooked dinner and taking the work away from you when you get home.  No prep required and then Beardy Fiance and I can just cuddle up to watch House of Cards (we’re binge watching and loving it and when that finishes, we’re back to Once Upon a Time.)

It can be hard to find variations of these easy prep dishes, however (is it possible to find a beef stew which isn’t a take on boeuf bourguignon?) so receiving a copy of One Pot Wonders was great.  The cookbook is aimed at dinners which can be prepared quickly and easily, using one dish, and since many of these are dishes which need to stew for a bit, most would be perfect for winter dishes in the slow cooker.

The chapters are divided into the type of dish (I really appreciated stews, pasta, soups) and there’s definitely a focus on hearty meals, which really suited me.  This is a great cookbook for people looking for more hearty evening meals.

Ingredients:

300g spaghetti

4 tablespoons olive oil

1/2 small red chili (optional)

2 shallots

2 cloves of garlic

25g flat leaf parsley

150ml white wine

750g clams (fresh or minced)

IMG_1653Mince the shallots, garlic, parsley and possibly chili.  Heat up the olive oil and start browning the vegetables and herbs.

IMG_1655I was hungry, so I simultaneously cooked the pasta.  You could also, to make less mess, cook the pasta first in the same pot.

IMG_1656Mix the pasta with the clam pot.  Serve in bowls, possibly with some garlic bread.
