Almond Butter Blondies

I’m having trouble beating the February blues.  As most of you probably know, Punxsutawney Phil has seen his shadow – meaning that there are 6 more weeks of winter.  Beardy Fiance was a bit confused about this tradition – after all, seeing his shadow means that it’s sunny – so why more summer?  After some research, it turns out that this dates from the Celtic tradition of Imbolc (making him a bad Irishman).    As everyone knows, peanut butter is forbodden in this house, so I decided to adapt this lovely wintery recipe into an almond butter.  It was still a bit nutty, but it had a lovely texture.  These days, there are so many different nut butters available, so I really should experiment a bit more with them.  This is a recipe for everyone else out there who is getting so sick of winter and wants to try to put a little positivity into their February!

Almond Butter Blondies (adapted from Wintersweet)


215g unsalted butter

430g light brown sugar

140g almond butter

2 large eggs

280g plain flour

1/2 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

230g chocolate chips

60g roasted almonds

DSC_2023Cream together butter and sugar.

DSC_2024Mix in the almond butter.

DSC_2026Mix in eggs.

DSC_2028Sift in dry ingredients.  Mix in chocolate chips and almonds.

DSC_2029Place in greased baking tray.

DSC_2030Bake at 175C for about 25 to 30 minutes.  Allow to cool completely and cut into small squares.
