Valentine’s Day Peanut Butter Bars

I was browsing in my local Target this year just before New Year’s Eve and I admit, I started laughing when I realised that the staff had hastily dispatched the Christmas stuff in favour of starting Valentine’s Day – they do not miss a trick.

So of course I was happy to find some peanut butter M&Ms in Valentine’s colours and I knew I’d be putting it to good use.  I  didn’t want to go the typical cookie route, so I decided to put together a version of these classics.

Valentine’s Day Peanut Butter Bars (adapted from Eagle)


1/2 box of Peanut butter Oreos

1/4 cup unsalted butter

1 cup sweetened coconut

1 cup chocolate chips

1 cup peanut butter M&Ms

1 tin condensed milk

DSC_2108Crush cookies into very fine crumbs (it’s really more of a paste) and place tightly in lined brownie tin.  Melt the unsalted butter and sprinkl on top, using the butter to keep the crumbs firmly in place.  Sprinkle coconut on top.

DSC_2109Sprinkle M&Ms and chocolate chips over coconut.

DSC_2110Pour the condensed milk on top.

DSC_2111Bake at 350F for about 25 to 30 minutes – it should be browned on the top.  Allow to cool and solidify.
