I’ve written before about the oddness of being so assimilated into Irish-ness (Irish humour, Irish references) while not being Irish. There’s been a real resurgence in classic Irish baking lately, which is quite humourous after Irish food was so generally looked down on by the rest of the world for so long. Popular blogger Rosanne Hewitt-Cromwell, in publishing her first cookbook, Like Mam Used to Bake, has sought to focus on the easy recipes which she loved baking with her mother (who passed Hewitt-Cromwell). This book is completely full of baked good, from cakes to biscuits to seasonal treats like gingerbread and Christmas cake.
One thing I liked about this book was that every recipe seemed very user friendly and easy to use. It would definitely be a great book for someone who was new to baking and wanted a really comprehensive cookbook of Irish favourites. Particularly for someone who enjoys baking with children or a teenager interested in have a good grounding in baking. The recipes could certainly be described as traditional, but they are definitely crowd pleasers – both children and the child-like tastes of Beardy Fiance and his workmates would be very happy with these treats.
Peppermint Sandwich Cookies (from Like Mam Used to Bake)
125g unsalted butter
125g caster sugar
25g ground almonds
25g cocoa powder
125g self raising flour
Bake at 180C for about 20 minutes (depending on the size of the sandwich sizes – they should be solid.) Allow to cool completely.
40g unsalted butter
125g icing sugar
1/2 teaspoon vanilla extract
2 drops green food colouring
(I added two tablespoons of milk, but these weren’t in the ingredients – I like a more liquidy filling)
