Banana Chocolate Chip Brownies

At one point in Sherlock Holmes, Irene Adler points out that London is January can indeed be very depressing.  Not that she pines away for her native New Jersey, but still – she’s right that without the charming Christmas decorations which made London look so cheerful during December, the bad weather and short days make it quite difficult to keep a positive attitude.  Every day feels like a day to snuggle under my duvet with a mug of hot chocolate.  It makes me miss my childhood home near Philadelphia – the snow has a lovely feeling and there’s much less walking to public transport and shivering in the drizzle!  As a result, I’m trying to come up with happy food combinations to keep myself a bit cheerful!

This one was inspired by the banana cream pudding mix I had in my cupboard.  I’d previously used a bit for my banoffee cookies (which were a success) and so brownies seemed like the next logical step.  I was a bit worried about how these would turn out, but apparently they were snapped up by my favourite taste testers at Beardy Fiance’s workplace.  Always a good sign.

Banana Chocolate Chip Brownies (adapted from


400g caster sugar

125g unsalted butter, melted

60g cocoa powder

4 tablespoons banana cream pudding mix

1 teaspoon vanilla extract

4 eggs

1/2 teaspoon baking powder

225g plain flour

1 banana

Chocolate chips to taste

OLYMPUS DIGITAL CAMERAMix together the caster sugar and melted butter.  Sift in the cocoa powder.

OLYMPUS DIGITAL CAMERAMix in the banana cream pudding mix, vanilla extract and eggs.  Sift in flour and baking powder.

OLYMPUS DIGITAL CAMERAChop the banana into small chunks and fold in, alongside the chocolate chips.

OLYMPUS DIGITAL CAMERABake at 170C for about thirty minutes (until you can put a knife into the brownies and they come out clean.)

  2. Here from Sweet and Savory Sundays – love the flavors in these! Pudding mix always makes baked goods soft and moist. Can’t go wrong with chocolate either!
