Happy New Year and Peppermint Fudge

So what did everyone else do for New Year’s Eve last night?  Beardy Fiance and I have fallen into the tradition where we trade off between our family homes, so this year, I was in Delaware with my parents, watching the ball in Times Square drop at midnight.  We’re not really partiers here (we love nothing more than to be snuggled up at home in front of the fireplace with a great movie on the TV), so a delicious dessert is a must!

Like most people, I try to use the NYE time to try to recalibrate myself and get ready for the next year.  There’s definitely a lot I have to look forward to next year – wedding planning, working hard on my PhD, a rewarding job, great friends, a wonderful family.  Although now that I spell it out, that’s a lot of work and so I definitely need to include some fun playtime!  But to start the year off right, I give you some peppermint fudge!

Hershey’s Peppermint Kisses Fudge (adapted from Hersheys)

Ingredients:

450g Hersheys Candy Cane bar

1 can condensed milk

OLYMPUS DIGITAL CAMERAMelt the Hershey chocolate and mix in the condensed milk.  Place the melted fudge mix into a lined cookie tin.  Now, this caused consternation in my house, since I was not familiar with the distinction between waxed paper and parchment paper.  You definitely want to go with parchment paper.

OLYMPUS DIGITAL CAMERAThis recipe literally took about ten minutes of active cooking, but it’s received so many compliments from people who have enjoyed it over the holiday – a great way to start out the new year, in my opinion.
