Peppermint Sandwich Cookies and a very Merry Christmas

I’d consider myself pretty middle of the road when it comes to Christmas – I have a playlist of Christmas songs I like, but I do find the all Christmas carols all the time thing right around Christmas day to be incredibly crazy (of course, only in America would you find such gems of Christmas songs as Dominick the Italian Christmas Donkey)

But the great thing for me is to get to come home to Hockessin and spend time with my family.  It can be really difficult being so far away from my family most of the time – not being able to drop in for dinner or come home for a weekend.  Christmas is a chance to relax with with my parents and my sister and get to enjoy all the amazingness of American baking (trust me, the aisles in Target put my local Sainsburys to shame.)

Christmas is pretty low key for us – my sister is almost always on West Coast time, so nothing starts too early!  We spend the day in our pajamas, my dad makes waffles for brunch and we have a Lord of the Rings marathon – I will likely force my sister to sit through some of the wonderfully horrible movies on It’s A Wonderful Lifetime.

It’s a very low key day.  So of course, I have to put together some low key snacks to munch on!  So when I found these Pillsbury Chocolate Peppermint Cookie Mix, I knew there was a simple but deadly cookie to be made…

Peppermint Sandwich Cookies (adapted from Pillsbury)

1 box of Chocolate Peppermint Cookie Mix

Oil and Eggs (as specified on the cookie box)

1 bag of Peppermint Patties

OLYMPUS DIGITAL CAMERAMix the cookie mix according to the directions on the cookie package.

OLYMPUS DIGITAL CAMERAStuff a ball of cookie dough with a peppermint pattie and place on a greased cookie sheet.

OLYMPUS DIGITAL CAMERABake according to the directions onto the packet.  Once you take the cookies out of the oven, push the peppermint candy bits on top of the baked cookies.
