Pumpkin Spice Cookie Bars

Probably my favourite treat growing up was my mum’s 7 layer bars.  I haven’t shared that recipe yet – I’m saving it for a very special occasion, but I was inspired by Love from the Oven‘s variation on this classic treat (she’s really demonstrated how highly adaptable it is) and when I was able to procure some pumpkin spice M&Ms, my first instinct was to use them to in a cookie bar – and I have to say, it was one of my more clever brainstorms!  These really got me in a Halloween mood and would be great for a school party or to share with your colleagues for Halloween or Thanksgiving.

Pumpkin Spice Cookie Bars (adapted from Love from the Oven)

Ingredients:

12 gingernut biscuits

1/4 cup unsalted butter

1 cup sweetened coconut

1 cup chocolate chips

1 package Pumpkin Spice M&Ms

1 can condensed milk

DSC_1682Pound the biscuits into crumbs and spread them evenly in a lined 8 inch by 8 inch square pan.  Melt the 1/4 cup butter and spread it over top of the crumbs.

DSC_1683Sprinkle first the coconut, then the chocolate chips and finally the M&Ms on top.

Pour the can of condensed milk on top.

DSC_1687Bake at 170C for about 25 to 30 minutes (until the top is a lovely golden brown.)

DSC_1688Allow to cool and cut into pieces.

  2. It’s been more than a year since you posted this lovely recipe but I didn’t it see it before. I simply love m&m’s and will definitely try to make these cookie bars for the next Halloween.
