Strawberry Cheesecake Oreo Sandwich Cookies

I spent the day today googling the various limited edition oreos – I absolutely love baking with Oreos (best cookies ever?  I think so!) and I’m drooling over these Banana Split Oreos.

Like pretty much everyone on the internet, I was fairly obsessed with Picky Palate’s sandwich cookies – she surrounded oreos with homebaked chocolate chip cookies.  I loved the idea of these cookies enough to use the format for snickerdoodles surrounding Gingerbread Oreos as well as some white chocolate cookies and it’s one of my favourites for creative Oreo flavours.

So when I came across these Strawberry & Creme Oreos at a Walmart (you come across some interesting things in Slower Lower Delaware!), I had to find the right sandwich cookie.

I had been really happy with the adaptions I had made of these chocolate cheesecake cookie, so I decided to make this over in a simple strawberry cookie – and they were a big hit with Beardy Fiance’s colleagues, which went well!  Definitely a muss if you’re a strawberry fan!

Strawberry Cheesecake Oreo Sandwich Cookies (adapted from The Brown Eyed Baker)

113g unsalted butter

3 ounces softened cream cheese

1 teaspoon strawberry extract

1 package Jell-o cheesecake pudding

125g plain flour

1/2 packet Strawberries & Creme Oreos

DSC_1249Cream together unsalted butter and cream cheese.

DSC_1250Mix in sugar, strawberry extract and cheesecake powder.

DSC_1251Sift in the flour.

Wrap a layer of dough tightly around the cookies – then place them on a greased cookie tray.  I always bake these on a whoopie pie pan, because it limits the spread and I’d definitely recommend that for any sandwich cookie.

DSC_1256Bake at 190C for about ten to twelve minutes (until golden brown).

DSC_1258These were very well reviewed by Beardy Fiance’s coworkers – one of whom quizzed him at length as to how I get the oreos into the sandwich cookie (baker magic!)  It’s a great recipe which can be adapted to any Oreos.
