Peanut Butter Blondies with Reeses Cups

Why do you never see peanut butter with white chocolate?  I’ve been wondering about this.  I see loads of milk chocolate with peanut butter, but rarely dark chocolate and even more rarely with white chocolate.  So when my friend Nina pointed out to me that there were Reese’s peanut butter cups with white chocolate shells, I was a bit curious!

They were quite a bit tastier than I expected, and to me, the baking possibilities were endless – but I had to do a blondie!

Of course, Beardy Fiance was grimacing – why do I have to make so many peanut butter based products?  Pshaw – I was having none of that!

White Peanut Butter Cup Blondies (adapted from Rachel Allen)


150g smooth peanut butter

100g unsalted butter

175g light brown sugar

1 egg

1 teaspoon vanilla extract

100g plain flour

25g white hot chocolate

1 teaspoon baking powder

1 cup white chocolate Reeses cups

DSC_1201Cream together butter and peanut butter.

DSC_1202Mix in the light brown sugar, egg and vanilla.

DSC_1203Sift in the other dry ingredients.

DSC_1204Line a brownie tin and spatula out half of the batter.  Unwrap some Reeses peanut butter cups and place into the batter.  Cover the Reeses cups with the rest of the batter.

Bake at 170C for about 20 to 25 minutes., until you can stick a fork in and it comes out clean.  Allow to cook and then cut up into brownie pieces!
