The Devil Wears Red Cupcakes

If it’s further proof that I was getting older, I was shocked to realise that it was the ten year anniversary of The Devil Wears Prada book.  I probably read it about fifty times when I was in high school and college – envisioning what it’d be like to have my own job and apartment and get to raid the free celebrity closet.  Ten years later, I have gotten to experience living in a tiny city, furniture by Ikea apartment.  No celebrity designer closet I can raid, unfortunately!

The new book by Lauren Weisberger, the sequel Revenge Wears Prada, has come out this year and the pure fact of it reminds me of my teenage years: and how teenage Beardy would have thought that I was pretty darn cool: living in London, helping women who have suffered from sexual violence, engaged to a wonderful fiance!

So this is for you, teenage Beardy.  A snack for you to enjoy (when your mum lets you have sweets, obviously!) while reading and dreaming about being a cool professional in a big city.

The Devil Wears Red Cupcakes (adapted from The Hummingbird Bakery Cookbook)

240ml whole milk

2 eggs

1/2 teaspoon vanilla extract (not pictured, because it was hiding in the back of the cupboard!)

280g caster sugar

200g plain flour

40g cocoa powder

1 packet of Jell-O Devil’s Food pudding mix

80g softened unsalted butter

1 1/2 teaspoons baking powder

DSC_1034Mix together the milk, eggs and vanilla in a mixing jug.

DSC_1035Mix in Jell-o pudding mix.

DSC_1036How can you not love devil’s food pudding mix?

Sift in other dry ingredients.

DSC_1040Add dry ingredients into lined muffin tins with muffin liners.

DSC_1042Bake at 170C for about ten minutes, until cupcakes are cooked all the way through (put fork into cupcakes and see if it comes out clean.)

For these cupcakes, I used a basic vanilla frosting and put a red chocolate shoe or purse on top.

DSC_1043This would also be a great cupcake for a girl’s night party or a hen night – would love to know what you make for girly nights!
