Chocolate Chip Brownie Squares

I’m helpless before a good chocolate chip cookie – I have about two recipes I love that I use for different occasions (the Beardy favourite Nestle Tollhouse recipe and the Avoca Cafe Cookbook 2 recipe – which always strikes me as a very Irish chocolate chip cookie recipe).  I also love Sheila Kiely‘s cookie recipes from her lovely Irish book Gimme the Recipewhich contains a lot of lovely biscuit recipes (which also tend to be easy recipes to throw together).  I loved the idea of this cross between a chocolate chip cookie bar and a brownie – easy to throw together to send to a friend with a chocolate craving!

Chocolate Chip Squares (adapted from Gimme the Recipe)

Ingredients:

250g unsalted butter

3 eggs

250g light brown sugar

3 tablespoons golden syrup

1 teaspoon vanilla extract

200g self-raising flour

7 tablespoons cocoa powder

200g chocolate chips

DSC_0603Cream together butter and sugar.  Mix in eggs and vanilla.

DSC_0605Mix in golden syrup.  Sift in cocoa powder and self-raising flour.

DSC_0606Mix in chocolate chips.  Place in lined brownie pan and bake at 160C for about 25 minutes.

DSC_0607Allow to cool, then cut into pieces.  I find it perfect for a craving for something a bit less gooey than a brownie, but a bit more gooey than a cookie.  Delicious and easy!

    These look delicious and the kind of consistency I like for a brownie (I know, controversial but I’m not keen on the gooeyness of regular brownies)
