Homemade Granola Cookies

Last weekend, we were in Clare to celebrate Beardy Boyfriend’s younger sister’s birthday – she was turning 30 – and we went to The Armada Hotel in County Clare.  It was absolutely beautiful and one of the best bits was the breakfast they provided (except for the part where I started a fire by putting a pain au chocolat in the toaster) – and they happened to have some homemade granola!  Me being me, I couldn’t resist taking some home to use for granola cookies.

I’m not a big granola fan (too healthy for me!) but there is something really lovely about homemade granola – perfect in these delicious cookies from Love and Olive Oil – perfect to bring while surfing or horseback riding in County Clare!

Homemade Granola Cookies (adapted from Breakfast for Dinner)


1 1/4 cups light brown sugar

3/4 cup granulated sugar

1 cup unsalted butter

2 large eggs (not pictured)

1 1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

2 1/4 cup plain flour

2 cups granola

1 cup chocolate chips

1/2 cup oats

DSC_0559Cream together butter and sugar.  Mix in eggs and vanilla extract.  Sift in flour, baking powder and bicarbonate of soda.


Mix in granola, chocolate chips and oats.

DSC_0563Cook at 170C (350F) for 12 minutes.  I had seen some delicious cookies made in a muffin top pan (which is incredibly difficult to find in the UK) so I made giant cookies in a Yorkshire pudding pan.

DSC_0564Everyone loves big cookies, right?  Beardy Boyfriend definitely does (and he is scoffing them down).  It’s a nice reminder for me of a vacation on the beach at Spanish Point in Clare.
