Chocolate Nutella Cookies

One of the things I love most about Cupcake Wars is the initial competition phase – when the contestants are forced to make cupcakes out of specific ingredients.  I had my own experience constructing cookies out of a limited set of ingredients!  When we were in Manchester for the Cake and Bake Show, Beardy Boyfriend’s aunt asked me to make dessert for that evening: but she had an incredibly limited selection of baking tools.  What she did have, however, were two amazing baking supplies: Nutella and a stand mixer.

Challenge accepted….

Chocolate Nutella Cookies (adapted from Kirbie’s Cravings)


1/2 cup + 1 tablespoon plain flour

1/4 cup cocoa powder

2 medium eggs

1 cup of Nutella

DSC_0444Mix all ingredients together in the stand mixer.


Let’s get another look at the amazing stand mixer.


Best thing ever?  I think so.  Bake at 170C (350F) for about ten minutes.  Of course, I was using an AGA cooker, so I found it to be a bit of a challenge to get the timing right and I overbaked a wee bit.  C’est la vie.


Allow to cool and serve with fruit and cream.  This cookie would also be a really lovely biscuit base for a pie or icebox cake!
