I never, ever thought I’d be grateful to a flu shot. But when, at my mother’s insistence, I got a flu shot at my local Walgreens, right after Christmas, I was browsing through the candy bargain bin and I came across these Christmas Cherry Cordial M&Ms. I thought it was odd that these were a Christmas product (to me – they’d make far more sense as a Valentine’s Day candy). So when I was surfing the Walmart website (as you do) and I saw that there were cherry cordial Valentine’s Day M&Ms, I took it as a sign – a sign that I should make some delicious cookies for Beardy Boyfriend’s mates.
Lindsay over at Love and Olive Oil prepared these simple chocolate cookies to highlight mint truffle Hershey Kisses. While the cookie would likely be a bit too plain on its own, it’s a great cookie to use in order to highlight a specific candy, so I decided to adapt it to highlight the cherry cordial flavoured M&Ms.
Cherry Cordial Chocolate Cookies (adapted from Love and Olive Oil)
1 1/2 cup (338g) caster sugar
2 ounces cream cheese
6 tablespoons (85g) unsalted butter, melted
1/4 cup (60ml) vegetable oil
1 large egg
2 tablespoons milk
1 teaspoon vanilla
1 3/4 cups (219g) plain flour
3/4 (89g) cocoa powder
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda (not visible behind the cocoa powder!)
1/2 bag of Cherry Cordial M&Ms
Mix together the melted butter, cream cheese and caster sugar.
Heat oven to 350F (or 170C) and use an ice cream scoop to place cookie dough on a greased baking tray. Bake for about 12 minutes.
And enjoy! Just a note for those who are rather ambivalent about cherry – this has a similar taste to Dr Pepper (so imagine a Dr Pepper cookie).
