Frito Chili Pie

I love winter food – for some reason, it’s nice to be able to cuddle up with a bowl of something warm and comforting, whether it’s a nice pasta cream sauce, some slow cooked risotto or, in this case, some Frito Chili Pie.  I decided to try this recipe to fight off the winter chill and throw together some delicious, salty (if incredibly unhealthy) dinner.  It really didn’t disappoint!  Unfortunately, the crucial ingredients (fritos) are hard to get here in the UK – so this is definitely a treat to be enjoyed when I’m back home with my family.

Frito Chili Pie (adapted from The Pioneer Woman)


2 pounds (900g) minced beef

2 cans of 12 ounce tomato sauce


1 packet of chili spice mix (which I tend to use for ease and convenience) or

2 tablespoons chili powder

1 tablespoon cumin

1 can pinto beans

4 tablespoons cornmeal

1 big bag of Fritos

1 block of Mexican cheese

Brown the meat.  Drain the fat from the meat (if you’re like me, and absolutely refuse to spend the extra money for lean meat).

Mix in the tomato sauce and the spices.  Mix in the beans.

Let it simmer for about 15 minutes on low heat.  Place a layer of Fritos on the bottom of your bowl.

Scoop the chili on top of the Fritos.  Add a healthy serving of grated Mexican cheese on top.  And dig in – this one is absolutely delicious (and I’d eat it every week if I could get Fritos!)
