I loved the idea of these cookies when I saw them and I thought they would be a great food for this festive time between Christmas and New Years – in fact, I might bring a plate of them to a New Years Eve party (I’ve always thought that cookies and cream was very holiday appropriate!) So I hope this brings some cheer to your New Years parties.
Cookies and Cream Pudding Cookies (adapted from Cookies and Cups)
3/4 cups (169g) caster sugar
3/4 cups (150g) light brown sugar
1/2 cup (113g) unsalted butter
2 eggs (unpictured)
1/2 tsp vanilla extract
1/2 tsp bicarbonate of soda
1 package of Oreo pudding
2 1/4 cup (281g) plain flour
2 cups cookie and cream candies (I used Hersheys Cookies and Cream drops)
Cream together the butter and sugar. Mix in eggs, vanilla and bicarbonate of soda. Mix in the Oreo pudding and sift in the flour.
Mix in the cookie and cream candies
Bake for about ten minutes – and note, this is a really tricky one to get right. It can be hard with pudding cookies to straddle the line between undercooked and burnt (because it comes really quickly!) – so be careful. But these chewy lovely cookies are one of my favourites that I’ve made. So I hope they brighten up your New Year!
