Lemon Stuffed Oreo Crinkle Cookies

Sometimes I forget how cool my home state of Delaware is.  I’m home for a week with my family, getting a bit of relaxing time and all I want to do is go to the grocery store (although I’ll be sharing some photos from browsing my local shops.)  But I noticed that the limited edition Lemon Twist Oreos have been replaced by new, full time Lemon Oreos.

So obviously I had to use this to make a sandwich cookie.  And once I dug up some Duncan Hines Lemon Supreme cake mix, I was sorted.  As will you be.  Spring is coming, people.  And once the snow melts here in Delaware, perhaps I’ll be able to envision it.

Lemon Stuffed Oreo Crinkle Cookies (adapted from Picky Palate)

Ingredients:

1 box Lemon cake mix

2 eggs

1/3 cup vegetable oil

1/2 box of Lemon Oreos

Powdered sugar

DSC_2017Mix together cake mix, eggs and vegetable oil.

DSC_2018Wrap dough around an Oreo, sprinkle with powdered sugar, and place on a lined baking sheet.

DSC_2019Bake at 170C for about ten to fifteen minutes.  Allow the cookie to cool completely.
