Banoffee Cookies

This came from a slight adaptation of these Banoffee Cupcakes I made from Peggy Porschen’s Cupcakes.  I loved the idea of doing a bit more banoffee, so I thought this would be a quick, easy cookie to whip together for the holiday season.  Christmas is definitely cookie time – I’m trying to throw together tins of cookies to give away to various co-workers, friends and family members!  Which can be fun, since it’s great to share your baked loves with the people you love, but keeping me very busy at the minute.

Banoffee Cookies (adapted from Peggy Porschen’s Cupcakes)

Ingredients:

76g unsalted butter

76g dulce de leche

300g granulated sugar

2 eggs

3 tablespoons Jell-o banana creme pudding

1/2 teaspoon bicarbonate of soda

281g plain flour

Chocolate chips to taste

Chopped bananas to taste

DSC_1888Cream the unsalted butter and mix in the dulce de leche.  Mix in the sugar.

DSC_1889Mix in eggs and banana pudding mix.  Sift in dry ingredients.  Mix in chopped bananas and chocolate chips.

DSC_1890Bake at 190C for about eight to ten minutes.  Allow to cool completely.
